Low Fat Gazpacho

ingredients

serves 4
8 fl oz (240 ml) mixed tomato and vegetable juice
9 oz (270 g) tomatoes, roughly chopped
1 clove garlic, chopped
1 small onion, chopped
1/2 large red pepper, seeded and chopped
1/2 large green pepper, seeded and chopped
1 tablespoon red wine vinegar
1 1/2 teaspoons chopped basil
2 oz (60 g) cucumber, chopped
salt and pepper
4 sprigs of basil

method

1. Place the tomato and vegetable juice, tomatoes, garlic, onion, red and green peppers, wine vinegar, chopped basil and cucumber in a blender or food processor and process until smooth.

2. Season to taste with salt and pepper; chill well.

3. To serve, pour the soup into four bowls and garnish each serving with a sprig of fresh basil.
