1. Form the beef or lamb into small balls with dampened hands, place on a rack under a preheated grill and cook for 6 - 8 minutes, turning to brown all sides.
2. Cut a thin slice from each end of the marrow and cut the marrow into eight slices.
3. Hollow out the centre of each slice, discarding all the seeds.
4. Heat the oil in a small pan, add the onion and stir-fry the crumbled minced meat for 3 - 4 minutes.
5. Place the minced beef in a bowl and mix in the onion, mixed herbs, tomato puree and breadcrumbs.
6. Stir in the eggs and season well with salt and pepper.
7. Arrange the rings of marrow on a baking sheet lined with baking parchment or foil and pack the meat stuffing into each ring.
8. Draw up the parchment or foil and fold over to seal.
9. Bake in a preheated oven, Gas Mark 4,180°C, 350°F for 1 1/4 - 1 1/2 hours.
