1. Cut the apple into quarters, remove the core, slice thinly and toss in the lemon juice.
2. Using a sharp knife, remove the peel and white pith from the orange and cut between each membrane to remove the segments.
3. mix together the apple, orange segments, Chinese leaves, fennel, celery and radishes.
4. Flake the mackerel into fairly large pieces and add to the salad.
5. Transfer the salad to a serving plate and garnish with several sprigs of watercress.
