Chicken Layer Bake recipe

ingredients

3 oz (90 g) skinned and boned chicken breast
1 oz (30 g) slice of cooked ham
2 oz (60 g) carrot
1 small courgette
salt
1 tablespoon spring onion
1/4 - 1/2 teaspoon tarragon
pepper
4 teaspoons white wine

method

1. Cut lengthways through the chicken breast.

2. Fold the ham in half, place on top of the bottom half of the chicken, then place the other half of the chicken on top of the ham.

3. Secure the three layers together with two cocktail sticks.

4. Cut the carrot into matchstick-sized strips. Slice the courgette.

5. Plunge the carrot and courgette into boiling salted water and boil for 3 - 4 minutes. Drain well.

6. Lay a piece of foil, about 8 inches (20 cm) square, on a baking sheet.

7. Place the carrot, courgette and spring onion in the centre, lay the chicken on top and sprinkle with the tarragon, salt and pepper and wine.

8. Fold the edges of the foil over to make a parcel and bake in a preheated oven, Gas Mark 4 (180°C) 350°F for 20 - 25 minutes.

9. Open the foil package, transfer the vegetables and chicken to a serving plate, remove the cocktail sticks and serve.
