1/2 pint (300 ml) skimmed milk
2 tablespoons clear honey
1 oz (30 g) porridge oats
1 oz (30 g) raisins or sultanas
5 tablespoons low-fat natural yogurt
4 medium apricots, stoned and chopped
approximately 2 teaspoons lemon juice
3 lemon slices to garnish
method
1. Heat the milk until steaming, stir in the honey, porridge oats and raisins and bring to the boil, stirring all the time.
2. Reduce the heat and simmer for 6 - 7 minutes, stirring continuously.
3. Remove the saucepan from the heat and leave until cold, stirring from time to time.
4. Stir the yogurt and apricots into the cold oatmeal mixture.
5. Add lemon juice to taste and spoon into three serving glasses.
6. Decorate each glass with a slice of lemon.
