1. Lay the fish on a piece of non-stick baking parchment in a steamer.
2. Steam on top of the pan in which the peas will be cooked for 8 - 10 minutes, according to the size of the fillet.
3. Plunge the peas into salted boiling water with the sprig of mint and boil for about 10 - 12 minutes for fresh peas or 4 - 5 minutes for frozen peas.
4. Drain the peas and transfer, with the sprig of mint, to a blender.
5. Add the milk and lemon juice and process until smooth.
6. Transfer the cooked fish fillet to a serving plate and keep warm.
7. Reheat the sauce and season to taste with salt, pepper and a little more lemon juice if necessary.
8. Pour the hot sauce over the fish and serve with a wedge of lemon.
