1. Lay the slice of Parma ham out flat. if you have more than one slice, overlap them slightly to make a single rectangle.
2. mix together the cottage and curd cheeses, add the pineapple and season with a dash of hot pepper sauce.
3. Spoon the cheese mixture into the Parma ham and fold the ham over to cover the cheese.
4. Arrange the chicory or endive leaves on a serving plate and place the parma parcel on top.
