1. Halve the peaches, discard the stones and, using a teaspoon, scoop out some of the peach flesh leaving sufficient for the peach halves to retain their shape.
2. Brush each half with the lemon juice.
3. Finely chop the scooped out peach and ham; mix together with any remaining lemon juice.
4. Mix together the chopped peach, ham, chives and cheese; season with salt and pepper sauce.
5. Pipe the cheese mixture back into each peach half and place a sprig of parsley on top.
6. Lay endive leaves on each serving plate and place a peach half on each plate.
