method
1. Remove the bones from each cutlet.
2. Melt the margarine over a moderate heat, add the onion and stir-fry for 3 - 4 minutes. Add the mushrooms and stir-fry for a further 2 minutes.
3. mix the onion, mushrooms, parsley, breadcrumbs and cheese together. Stir in the beaten egg and season well with salt and pepper.
4. Lay a large piece of non-stick baking parchment on a baking tray. Arrange the cod cutlets on the parchment, pile the stuffing in the centre and on the top of each cutlet, then fold the parchment over to seal.
5. Bake at Gas Mark 4 (180°C) 350°F for 25 - 30 minutes.
