Low Fat Stuffed Dates

ingredients

serves 4
4 oz (120 g) curd cheese
3 tablespoons peanut butter, smooth or crunchy
3/4 oz (20 g) large raisins
2 tablespoons low fat natural yogurt
2 teaspoons finely grated orange zest
20 fresh dates

method

1. Beat the curd cheese and peanut butter together.

2. Roughly chop the raisins and add to the cheese mixture with the yogurt and orange zest.

3. Slit each date lengthways, remove the stone and spoon a little of the stuffing into each date. Arrange on a serving plate.
