ingredients

juice of 1/2 a medium orange
1/2 medium mango
1/4 pint (150 ml) buttermilk, chilled
1 teaspoon clear honey
lime juice
slice of lime to garnish

method

1. Place the orange juice in a blender, scoop all the flesh from the skin of the mango and add to the orange juice with the buttermilk and honey. Process until smooth.

2. Add lime juice to taste and process once again.

3. Pour the puree into a glass and decorate the side of the glass with a slice of lime.
