Tofu Dressed Salad

ingredients

serves 4
few lettuce or radicchio leaves
2 - 3oz (60 - 90g) cucumber, sliced
2 kiwi fruit, sliced
1 yellow pepper, cored, seeded and sliced
6 radishes, sliced
3 oz (90 g) fennel, sliced

for the dressing:

6 oz (180 g) soft or silken tofu
1/2 teaspoon fresh chopped ginger
2 tablespoons lemon juice
1 teaspoon soy sauce
2 teaspoons olive oil salt and pepper

method

1. Arrange the lettuce or radicchio leaves around the edge of the salad bowl or plate.

2. mix together all the other salad ingredients and spoon into the centre of the arranged leaves.

3. Place the tofu, ginger, lemon juice, soy sauce and olive oil in a blender and process until smooth. Season to taste with salt and pepper.

4. Transfer the dressing to a small bowl and serve separately, or spoon over the centre of the salad and mix well.
