9 oz (270 g) leeks, chopped
2 tablespoons water
3 oz (90 g) curd cheese
1 1/2 oz (45 g) mature Cheddar cheese, grated
1. Place the chopped leeks in a saucepan, add the water and a pinch of salt and cover the saucepan. Place over a moderate heat and cook for 10 - 12 minutes until the leeks are tender.
2. Transfer the leeks and their cooking liquid to a blender, add the curd cheese and process until smooth.
3. Spoon the leek puree back into the saucepan, stir in the grated cheese and season to taste with salt, pepper and lemon juice. Stir over a low heat until the cheese has melted. Serve immediately.
