Low Fat Salmon Toasts

ingredients

serves 2
2 teaspoons margarine
5 teaspoons flour
1/2 pint (150 ml) skimmed milk
1 tablespoon chopped chives or spring onions
4 oz (120 g) drained canned salmon, flaked
3 oz (90 g) drained canned sweetcorn
lemon juice
salt and pepper
2 x 1 oz (30 g) slices of bread
1 teaspoon low-fat spread

method

1. Heat the margarine in a saucepan, stir in the flour and remove from the heat. Gradually blend in the milk.

2. Bring the sauce to the boil, stirring all the time, and boil for 1 - 2 minutes. Stir in the chives, salmon and sweetcorn and season to taste with lemon juice, salt and pepper.

3. Toast the slices of bread and reheat the salmon and sweetcorn sauce, stirring continuously.

4. Spread the toast with the low-fat spread and top with the salmon and sweetcorn. Serve immediately.
