1. Place the cheese, brown ale, mustard and margarine in a saucepan and stir over a low heat until creamy. Allow to cool and thicken slightly.
2. Meanwhile, toast the bread.
3. Season the cheese mixture with a little pepper and spoon over the toast.
4. Lay the toast on a sheet of foil on the grill rack to prevent any cheese which may bubble off the bread from dripping into the grill pan.
5. Cook the rarebit under a very hot grill until golden brown and bubbling. Serve immediately.
