1. Using a sharp knife, make several slices down through the tomato, almost to the base.
2. Thinly slice the hard-boiled egg into as many slices as the tomato.
3. Place a slice of egg in between each slice of tomato.
4. Mix the cottage cheese, mayonnaise, lemon juice and spring onions together.
5. Arrange the salad leaves on a small serving plate and spoon the cottage cheese mixture in a circle in the centre.
6. Flatten and spread the mixture evenly and place the tomato fan on top.
