Dairy free Hot Pear Brownie

This recipe is Vegetarian, Gluten free, Wheat free and Dairy free.

ingredients

serves 6
820 g (30 oz) 4 cups of pears in fruit juice
70 g (2 1/2 oz) 1/2 cup of rice flour
A pinch of salt
1 teaspoon of Gluten free baking powder
70 g (2 1/2 oz) 1/3 cup of Dairy free margarine
1/2 teaspoon of vanilla essence
70 g (2 1/2 oz) of (DF/GF) dark chocolate
170 g (6 oz) generous 3/4 cup of caster (superfine) sugar
2 large free-range eggs, beaten
70 g (2 1/2 oz) 2/3 cup of chopped pecan nuts

method

1. Preheat the oven to 180°C (350°F) gas 4

2. Grease a deep baking dish. Cover the base with the pears.

3. Sift the flour, salt and baking powder into a bowl. Put the margarine, vanilla essence and chocolate into a saucepan, stir until melted and then remove from the heat.

4. Beat in the sugar, eggs and pecans. Stir the chocolate mixture into the dry ingredients, pour the batter over the pears and bake in the centre of the oven for about 35 minutes or until the brownie mix is just firm.

5. Serve warm with Dairy free ice-cream or Zabaglione for a dinner party.
