1 onion, chopped
2 tbsp oil
2 tsp hot curry powder
250 g red lentils
750 ml hot vegetable stock
2 tbsp mango chutney
salt and freshly ground black pepper to taste
method
1. Place the onion and oil in a bowl, cover and cook on HIGH for 2 minutes.
2. Add the curry powder and cook for 1 minute.
3. Stir in the remaining ingredients, cover and cook on HIGH for 20 minutes.
4. Check the seasoning, stir well then transfer to a warmed serving dish.
