Griddled Chicken with Pepper Sauce

ingredients

serves: 4
1/2 tbsp olive oil
4 skinless chicken breasts
2 fresh chillies, seeds removed
2 large red peppers, cored and chopped
75 g sundried tomatoes
2 tsp soft light brown sugar
1 tbsp white wine vinegar
227 g can chopped tomatoes
salt and freshly ground black pepper
1 tbsp freshly chopped parsley

method

1. Lightly brush a griddle pan or frying pan then cook the chicken breasts for 15 minutes or until cooked thorough.

2. Meanwhile, place the remaining ingredients except for the parsley in a food processor or blender and blend until smooth.

3. Transfer to a saucepan.

4. Simmer the sauce for 3 - 4 minutes then spoon over the cooked chicken breasts, and sprinkle with parsley.
