1. Lightly brush a griddle pan or frying pan then cook the chicken breasts for 15 minutes or until cooked thorough.
2. Meanwhile, place the remaining ingredients except for the parsley in a food processor or blender and blend until smooth.
3. Transfer to a saucepan.
4. Simmer the sauce for 3 - 4 minutes then spoon over the cooked chicken breasts, and sprinkle with parsley.
