300 g fully prepared cooked beetroot, diced
2 shallots, peeled and finely diced
20 g fresh dill, chopped
1 tbsp balsamic vinegar
salt and freshly ground black pepper
small gammon joint, cooked to serve (optional)
method
1. Place the beetroot in a bowl with the shallots, dill, balsamic vinegar and seasoning to taste.
2. Mix well and allow to stand for at least 10 minutes.
3. Serve with thick slices of freshly cooked gammon and mashed potatoes if liked.
