1. For the dressing, place the lime juice, chilies, fish sauce and sugar in a small saucepan, and set aside.
2. Place the rice noodles in a heatproof bowl and leave to stand in boiling water for 4 minutes, then drain and place in cold water until required.
3. Cook the choi sum in boiling water according to pack instructions, then drain and keep warm.
4. Heat the oil in a medium frying pan and cook the marlin steaks over a moderate heat, 2 minutes on each side for rare, 21/2 minutes on each side for medium, or 4 minutes on each side for well-done.
5. Meanwhile, gently warm the dressing over a low heat. Refresh the rice noodles in boiling water, drain well, toss with the choi sum and serve on 2 individual plates.
6. Place a marlin steak on each plate, then drizzle over the chilli dressing, garnish with spring onions and serve immediately.
