300 g can broad beans, drained and shelled (pinch the outer skin to remove)
2 tbsp freshly chopped mint
1 tbsp virgin olive oil
1 tbsp lemon juice, freshly squeezed
salt and freshly ground black pepper
method
Combine all the ingredients in a bowl, adding seasoning to taste.
