1. Soak apricots in water overnight.
2. Trim excess fat from the pork fillets and split carefully down the centre without cutting the fillet in half.
3. Drain the apricots.
4. Peel and slice the apple.
5. Arrange the apricots and apple slices inside the fillet.
6. Draw the edges together and tie securely with string.
7. Melt the butter in a frypan and brown the meat on all sides.
8. Season with salt and pepper.
9. Add the water, cover and simmer for 1 hour or until the meat is tender.
10. Remove the string before serving the meat.
11. Slice the fillets and serve with a gravy made by thickening the meat juices in the frypan.
