Sticky toffee pudding

ingredients

serves 4
low fat cooking spray
50 g (1 3/4 oz) polyunsaturated margarine
50 g (1 3/4 oz) dark soft brown sugar
2 eggs, beaten
100 g (3 1/2 oz) self raising white flour
2 tablespoons boiling water
3 tablespoons golden syrup

method

1. Spray four individual metal moulds with a little low fat cooking spray.

2. Place the margarine and sugar in a warmed mixing bowl and beat them together until fluffy.

3. Beat in the eggs and then fold in the flour with the boiling water

4. Divide the golden syrup between the four moulds and then spoon the sponge mixture over the top.

5. Transfer the moulds to a steamer and steam for 40 minutes. Take care never to allow the steamer to boil dry, top up with boiling water if necessary.

6. To serve, carefully run a round bladed knife around the edge of the moulds and turn them out on to four small serving plates.
