1. Rinse the pork and pat it dry with kitchen paper. Place it in a dish.
2. Mix together the five spice powder, soy sauce and tomato ketchup, and spoon it over the pork.
3. Leave the pork to marinate for 1 hour
4. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C.
5. Place the marinated pork in a roasting tin and roast for 40 minutes.
6. While the pork is cooking, using clean hands, gently separate the cooked, cooled rice grains.
7. Heat a large non stick frying pan and spray it with low fat cooking spray.
8. Add the carrots, peas, spring onions and beansprouts, and stir fry for 2 - 3 minutes.
9. Mix the rice into the pan and cook, stirring frequently, for 5 minutes.
10. Push the rice mixture to one side of the pan and pour the egg in the cleared space.
11. Cook, without stirring, until you see the egg setting and then mix the cooked egg into the rice.
12. Using two forks, shred the cooked pork and mix it into the rice. Serve hot.
