method
1. Using small kitchen scissors, snip the salmon into tiny pieces and set aside.
2. Place the cottage cheese in a sieve and allow it to drain for 10 minutes.
3. Discard the liquid and then push the cottage cheese through the sieve, using the back of a spoon.
4. Beat the smoked salmon pieces, lime zest and seasoning into the cottage cheese.
5. Whisk the egg white until it forms stiff peaks. Using a metal spoon, fold it into the smoked salmon mixture - don't over stir or you will knock out the air from the mousse.
6. Spoon the mousse into two individual ramekin dishes and chill for 30 minutes.
