Chili chips

ingredients

serves 4
700 g (1 lb 9 oz) potatoes, scrubbed and cut into thick wedges
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon chili flakes
1 teaspoon Marmite
2 tablespoons boiling water
1 tablespoon finely chopped fresh chive

method

1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C.

2. Rinse the potato wedges and pat dry with kitchen paper Place them in a bowl.

3. Mix together the oil, paprika, chilli flakes, Marmite and boiling water. Drizzle this mixture over the potatoes and toss them well to make sure they are evenly coated.

4. Line a baking tray with non stick baking parchment. Arrange the potato wedges on the tray and bake them for 20 minutes or until crispy and cooked through. Scatter with chives and serve hot.
