Pineapple Custard #2

ingredients

serves 1.
2 sponge fingers, crumbed
1/4 of 227 g can of pineapple chunks in natural juice
125 g tub of low fat custard

accompaniments (you may need these)

method

1. Place the sponge finger crumbs in the base of an individual dish.

2. Spoon the pineapple, reserving two chunks, and any juice over the crumbs. Leave the dish to stand for 5 -10 minutes, so the juice becomes absorbed by the sponge.

3. Top with the custard and then decorate the top with the reserved pineapple. Chill in the fridge until required
