Cajun sausagemeat patties

ingredients

serves 4
225 g (8 oz) sweet potatoes, peeled and diced
450 g (1 lb) sausagemeat
1 tablespoon Cajun spice mix
1 fresh red chilli, de-seeded and chopped finely
1 garlic clove, crushed
2 tablespoons chopped fresh coriander
salt

for the salsa

225 g (8 oz) ripe mango, diced
1 small red onion, chopped finely
2 tablespoons chopped fresh coriander
1 tablespoon white wine vinegar
2 tablespoons mango chutney

method

1. Cook the sweet potatoes in lightly salted, boiling water for 10 minutes until tender.

2. Drain and mash well. Allow to cool a little.

3. In a mixing bowl, place the sausagemeat, Cajun spice mix, chilli, garlic and coriander and mix well.

4. Add the mashed sweet potatoes and stir it into the sausagemeat.

5. Using clean, wet hands, shape the mixture into twelve small patties.

6. Place them under the grill and cook them for 3 - 4 minutes on each side.

7. To make the salsa, mix together the diced mango with the red onion, coriander vinegar and mango chutney.

8. Chill in the fridge until ready to serve.
