Potatoes With Bay Leaves

ingredients

serves 6
18 small potatoes, washed but unpeeled
18 bay leaves, fresh or dried
3 tbsp extra-virgin olive oil
salt and pepper

method

1. Preheat the oven to 170°C (350°F ) gas mark 3.

2. Make a deep incision in the longest side of each potato, without cutting right through, and insert a bay leaf in the incision.

3. Pour the oil into a baking dish and add a little salt and pepper to taste.

4. Roll the potatoes in the oil until well coated, then cook them for about 50 minutes to 1 hour, until tender.

5. Arrange the potatoes on a serving dish, leaving the bay leaf inside, and serve them hot.

6. You can substitute the bay leaf with a rosemary sprig if you like.
