method
1. Cook the spaghetti or macaroni in boiling salted water until tender.
2. Meanwhile, stir the mustard, salt, pepper and cayenne into the sauce.
3. Melt the butter in a frying pan and fry the onions until golden brown.
4. Add the mushrooms, if using, and fry for a further 3 minutes. Drain.
5. Drain the spaghetti or macaroni, then arrange half of it on the bottom of a buttered 1.75 litre (3 pint) baking dish.
6. Cover with half the sauce, then add the onion mixture followed by the turkey, bacon and herbs.
7. Cover with the rest of the pasta and pour over the remaining sauce. Sprinkle with the cheese.
8. Bake in a preheated moderately hot oven 200°C (400°F) Gas Mark 6 for 45 minutes or until the top is well browned and all the ingredients are heated through.
