2 large ripe tomatoes, peeled, seeded and chopped
1 red pepper, seeded and chopped or 2 canned pimientos, chopped
1 garlic clove, crushed
3/4 - 1 1/4 cup (50 - 75 g) fresh wholemeal breadcrumbs
salt and pepper
method
1. Mix the tomatoes, pepper or pimientos and garlic in a bowl. Add enough breadcrumbs to absorb the juice from the tomatoes.
2. Add salt and pepper to taste, then use as required (best with white fish).
