1. Preheat the oven to 180°C (375°F) gas mark 4.
2. Cut the tomatoes in half horizontally, scoop out the flesh and discard.
3. Mix the mozzarella with the oil and capers.
4. Fill one half of each tomato with the mozzarella and caper mixture and add salt and pepper to taste.
5. Cover with the basil leaves and top each with the reserved halves.
6. Bake in the oven for about 40 minutes, then arrange on a platter and serve.
