Pickled Pig's Trotters

ingredients

serves 2 - 3
6 pigs' trotters, soaked for 6 to 8 hours
1 pint (600 ml) malt vinegar
6 whole cloves
1 bay leaf
2 mace blades

method

1. Drain the trotters and split and crack them in several places.

2. Put into a saucepan and cover with some fresh water.

3. Bring to the boil and simmer gently until tender. Drain and place in a heatproof dish.

4. Put the remaining ingredients in a saucepan and bring to the boil.

5. Boil for a few minutes, then pour over the trotters.

6. Leave to cool, then keep in a cool place for 24 hours.

soak in what?
trotters are pickeled to start?
is vinegar for pickling?

Putting in fresh water must mean that they were soaked in water in the first place. Remaining ingredients includes the vinegar.
