1. Remove skin from pineapple, cut into slices and remove core.
2. Fill the cavity of each slice with a mixture of raisins and walnuts.
3. Combine the lightly beaten egg whites, lemon juice, sugar and lemon rind in a heatproof basin.
4. Beat briskly over boiling water for 5 minutes, then remove from heat, and fold in the coconut.
5. Cool slightly and pile onto each pineapple slice.
6. Brown tops lightly under a medium-hot grill and serve at once.
