method
1. Choose well-ripened avocado pears, peel and stone.
2. Blend with onion, salt, pepper and Tabasco sauce until smooth.
3. Soften gelatine in 1/4 cup cold water.
4. Add boiling water, stir until dissolved.
5. Stir in remaining cold water, pour into a large bowl and cool.
6. When gelatine mixture is consistency of egg white, gradually fold in whipped cream, mayonnaise and avocado mixture.
7. Pour into a mould, previously rinsed with cold water, chill until set.
8. Invert and unmould onto a chilled plate lined with lettuce leaves.
9. Coat sliced avocado with French dressing and garnish mould.
