Apricot Apple Cobbler

ingredients

serves: 5 - 6
1 cup dried apricots
2 cooking apples, peeled and chopped
1/2 cup sugar

for the cobbler topping

90 g (3 oz) butter
1/2 cup caster sugar
1/2 teaspoon vanilla essence
2 eggs
1 1/4 cups self-raising flour
1/4 cup milk

method

1. Rinse apricots, cover with hot water and leave to soak for 1 hour.

2. Peel and slice apples, add to apricots with the sugar and cook until soft.

3. Place fruit in the base of a greased ovenproof dish, keep hot in oven.

for the cobbler topping

1. Cream together the butter, sugar and vanilla essence, add eggs and beat well.

2. Fold in the sifted flour and milk alternately and spread lightly over the hot fruit.

3. Bake in a moderate oven for 30 to 35 minutes.

4. Serve with custard or cream.
