method
1. Place cooked spinach in a shallow casserole or 4 individual ovenproof dishes and keep hot.
2. Melt butter in a saucepan, add flour and cook over a low heat for 2 to 3 minutes, gradually add milk, stirring continuously.
3. Bring to the boil, stirring continuously, add cheese and seasonings. Keep warm.
4. Poach eggs. Arrange on top of spinach and pour cheese sauce on top.
5. Sprinkle with a little Parmesan cheese, place under heated grill until lightly browned and serve immediately.
