1. Preheat a griddle pan.
2. Heat 1 tbsp oil in a frying pan.
3. Take the feta slices and dip them in the flour.
4. Drizzle a drop of oil over the feta slices and place them in the griddle. Fry the slices 2 minutes, either side, or until the cheese starts to melt and become golden.
5. Add the shallots and shiitake to the fry pan and sauté for 3 minutes.
6. Add the lemon juice and stir well. Remove the frying pan from the heat.
7. Remove the feta from the griddle. Place the feta on a plate and top with the shallot mixture. Drizzle over extra olive oil, if desired, and serve.
