500 g (1 lb) long grain rice
250 g (8 oz) lean ham
1 cup sliced French beans
1 cup diced carrots
chicken stock
1 cup thinly sliced celery
1 large cucumber, peeled and diced
1 tablespoon chopped chives
1 tablespoon chopped parsley
1 teaspoon chopped capers
1/2 cup French Dressing
salt and pepper
parsley for garnish
method
1. Boil rice in salted water for 12 to 15 minutes or until just cooked.
2. Rinse well in a colander and allow to dry thoroughly.
3. Cut ham into fine strips.
4. Cook beans and carrots in chicken stock until just tender, drain and cool.
5. Place rice, ham and vegetables in a salad bowl, add the chives, parsley, capers and French dressing.
6. Mix together thoroughly and season to taste with salt and freshly ground pepper.
7. Chill thoroughly.
8. Serve garnished with parsley.
