method
1. Melt butter and saute spring onions until soft.
2. Stir in the flour and cook for 1 minute.
3. Add milk, stir until boiling.
4. Add parsley, lemon juice, salt and pepper.
5. Cook for 2 minutes, stirring continuously then add the meat. Set aside to cool.
6. Dip bacon into boiling water, leave for 1 minute and cut into 8 cm (3 inch) strips.
7. Put a tablespoon of the mixture on to a piece of bacon, roll into a cork shape.
8. Dip into batter, deep fry in hot oil.
9. Drain and serve at once accompanied with tomato sauce.
for the Fritter batter
1. Sift flour and salt into bowl.
2. Pour oil into centre and gradually add the water, mixing to a smooth batter.
3. Beat until bubbles rise.
4. Whisk egg white until stiff and fold in just before using.
