method
1. Cream butter and sugar in a mixing bowl, add eggs, vanilla essence and beat well.
2. Sift flour, baking powder and salt and mix in well.
3. Divide into four portions and use as follows.
Coffee
Add 2 teaspoons instant coffee and shape into a triangular roll, wrap in waxed paper and chill.
Slice thinly and top with an almond.
Coconut and Orange
Add 1/3 cup desiccated coconut and 1/2 teaspoon orange essence.
Shape into a roll. Wrap, chill and slice thinly.
Ginger
Roll, wrap, chill and slice, topping with a piece of preserved ginger.
Chocolate pinwheels
1. Divide mixture in half.
2. Add 2 teaspoons cocoa, 1/2 teaspoon ground cinnamon to half mixture.
3. Shape into a rectangle 5 mm (1/4 inch) thick.
4. Shape remaining half into a rectangle 5 mm (14 inch) thick.
5. Put one on top of the other, roll up tightly, wrap in waxed paper, chill and slice thinly.
To Cook
Place sliced biscuits on a greased baking tray and cook in a moderate oven 180-190°C (350-375°F) for 10 to 15 minutes.
