method
1. Cut chocolate into small pieces and melt in a bowl set in hot water.
2. Beat egg yolks with sugar in a heatproof bowl over simmering water.
3. Blend in melted chocolate, brandy or rum, and vanilla essence and remove from heat. Cool.
4. Whisk egg whites until stiff and fold into the chocolate mixture with 2 tablespoons of the whipped cream.
5. Pour chocolate mousse into small mousse pots, or small individual glass sweet dishes and place in refrigerator until set, about 2 hours.
6. Pipe a large rosette of cream onto each mousse and decorate with grated chocolate or chocolate curls.

Easy to make, took about 20 mins and taste yummy, although I opted for milk choc
