Select and prepare fruit from following:
1. bananas, peeled and sprinkled with lemon juice
2. apples, peeled, cored and cut into 1 cm (1/2 inch) rings
3. canned pineapple slices or chunks, well drained
1. Prepare batter (see below).
2. Prepare chosen fruit and drop gently into batter.
3. With a skewer, transfer coated fruit to a pan of deep, hot oil and deep fry until golden brown and fruit is hot and cooked.
4. Drain well and serve piping hot sprinkled with icing or caster sugar and topped with whipped cream or ice cream.
for the Fritter batter
1. Sift the flour and the salt into a mixing bowl.
2. Make a well in the centre and drop in the eggs, add half the milk gradually and mix to a smooth batter, using a wooden spoon, and working in the flour from the sides.
3. When all the flour is worked in, beat the batter until smooth with the back of the wooden spoon.
4. When the surface of the batter is covered with bubbles, stir in the remaining liquid to give the consistency of thin cream.
5. If possible leave the batter to stand in a cool place for 1 hour before using.
