Scallops en Brochette

ingredients

serves: 4
40 scallops
1/4 cup melted butter
1 tablespoon lemon juice
salt and pepper to taste
boiled rice and lemon wedges for serving

method

1. Thread scallops on to 4 skewers.

2. Brush with melted butter and sprinkle with lemon juice.

3. Grill under a pre-heated grill or over a hot charcoal fire for approximately 5 minutes, turning often.

4. Baste with a little more melted butter while cooking. Season to taste with salt and pepper.

5. Serve immediately with boiled rice and lemon wedges.

Cooking tip: If bamboo skewers are used, soak them for several hours in cold water beforehand to prevent them from burning
