German Coffee Cake

ingredients

1 1/2 cups self-raising flour
1/2 teaspoon mixed spice
1/4 cup caster sugar
60 g (2 oz) butter
3/4 cup mixed dried fruit
1 egg milk

for the streusel topping

2 tablespoons caster sugar 2 tablespoons butter
2 tablespoons flour
1 teaspoon ground cinnamon

method

1. Sift flour, spice and sugar into a mixing bowl.

2. Rub butter in lightly with fingertips until mixture resembles fine breadcrumbs. Stir in mixed fruit.

3. Beat egg lightly in measuring cup and add milk to make 3/4 cup liquid.

4. Stir into flour mixture with a round-bladed knife.

5. Blend thoroughly and turn into a greased and floured 20 cm (8 inch) layer cake tin.

6. Level top with a spatula and sprinkle with streusel topping (see below).

7. Bake in a hot oven 200-230°C (400-450°F) for 25 to 30 minutes until cake shrinks away from sides of tin.

8. Turn out onto a wire rack covered with a piece of greaseproof paper.

9. Place another rack on top and turn cake right side up.

10. Serve warm or cold with butter if desired.

for the streusel topping

Blend ingredients together until crumbly.
