75 g (1/2 oz) butter
100 g (4 oz) streaky bacon, rinded and diced
3 onions, chopped
750 g (1 1/2 lb) white fish fillets
salt
cayenne pepper
1 teaspoon Worcestershire sauce
150 ml (1/4 pint) tomato ketchup
150 ml (1/4 pint) water
method
1. Melt the butter in a frying pan and fry the bacon and onion until the onion is softened.
2. Make alternate layers of fish and the bacon mixture in a baking dish, sprinkling each layer with salt and cayenne.
3. Mix together the remaining ingredients and pour over the top.
4. Cover the dish and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 45 minutes.
