method
1. Sift flour and salt into a mixing bowl.
2. Make a well in the centre and add the melted butter and milk while mixing with a knife to form a fairly moist dough.
3. Turn immediately onto a lightly floured board, dust top with flour and knead lightly.
4. With floured hands shape into an 18 cm (7 inch) round and place on a greased baking tray.
5. Bake in a hot oven 200-230°C (400-450°F) for 25 to 30 minutes.
6. Turn onto a wire rack and while warm, slice and butter.
Cheese damper
Add 1/2 cup grated cheese and a pinch of cayenne pepper to the sifted flour and salt before adding the liquid and sprinkle the damper with a little more grated cheese before baking.
Fruit damper
Add 1/2 cup mixed dried fruit and 1 tablespoon sugar to the sifted flour and salt before adding liquid.
Orange damper
1. Add the finely grated rind of an orange and 1 tablespoon caster sugar to the sifted flour and salt before adding liquid.
2. Sprinkle the top of the damper with a little sugar before baking.
