1.25 to 1.5 kg (2 1/2 to 3 lb) shin of beef, cubed
175 g (6 oz) bacon, rinded and chopped
4 tomatoes, skinned
3 garlic cloves, crushed
1/2 teaspoon chopped fresh rosemary
150 ml (1/4 pint) red wine
2 tablespoons tomato puree
salt pepper
method
1. Put the meat into a casserole and add the remaining ingredients.
2. Cover and cook in a preheated cool oven 150°C (300°F) Gas Mark 2 for 4 to 5 hours or until the meat is tender.
