1. Beat together the eggs, chives, soy sauce, seasoning and 3 tablespoons of water
2. Heat the oil in a 23 cm (9 inch) frying pan and add the egg mixture.
3. Cover the pan and cook gently for 5 minutes until the egg mixture has set.
4. Scatter over the crab meat, and then dot with the soft cheese. Finally sprinkle the watercress on top.
5. Remove the pan from the heat and gently slide the omelette on to a chopping board or clean surface.
6. Roll up the omelette, enclosing the filling.
7. Slice the roll into eight rings and serve, allowing four rings per person.
